Boiled Beets with Sautéed Beet Greens


Beets, the super food you either love or hate. I happen to love them! I love to have a side of beets for lunch and dinner. I even might throw a couple in my morning smoothie! YUM! Oh, and did I mention how good they are for you? Beets provide antioxidant, anti-inflammatory and detoxification support. Beets help guard the body against heart disease and certain cancers. Beets are a good source of folic acid, Vitamin C and potassium. Beets also provide Vitamins A and C, calcium and iron, and add fiber to the diet. Hey, and don't throw out those beet greens! Beet greens are also packed with nutrient-rich qualities that are delicious sautéed and eaten alone or mixed with your beets. So here it is my favorite red beets recipe. It's a staple around here!


Boiled Beets with Sautéed Beet Greens

Serves 4-6

Ingredients:

2 Bunches of fresh beets with greens, trimmed
2 cloves of garlic, minced
1 small onion, diced
1 cup mushrooms, sliced
3 tablespoons of red wine vinegar
Chopped fresh parsley
Fresh pepper to taste

Directions:

Cut greens off beets. Peel, trim and rinse beets. Cut beets into chunks and place in a large pot covering the beets with water and two tablespoons of red wine vinegar. Bring water to a boil, reduce to simmer and cook beets until tender 45 minutes to 1 hour. Drain beets and rinse under running cold water until beets can be handled. The skins can now be easily peeled off the beets.
While the beets are cooking, mince 2 cloves of garlic, dice onion and slice mushrooms. Add two tablespoons of water to sauté pan with lid. Stir, cover and water sauté garlic, mushrooms and onion for 5 minutes over medium heat. Add more water or turn to low heat if needed to prevent burning. Rinse beet greens thoroughly, chop and add to sauté pan. Cover with lid, stir and cook until beet greens are wilted and tender, about 10 minutes.

Add sautéed greens to beets, toss with 1 tablespoon of red wine vinegar and season with fresh pepper to taste. Serve on platter and garnish with fresh chopped parsley.
